Pumpkin Ravioli: How To Make It!

These essential ingredients include 10 tbs unsalted butter, 2 cups heavy cream, 1 pound fresh pumpkin cut in one-inch cubes, ˝ bay leaf, 2 tbs minced fresh thyme leaves, 2 tbs minced fresh sage with 6 small leaves for garnish, and 2 eggs, beaten.

During the preparation of Pumpkin Ravioli, you have to heat a sauté pan over low heat. After then, you can add 4 tbs butter, and fry until it becomes foamy. After adding the cubed pumpkin to foamy butter, cook it. Don't forget to stir it so that it doesn't burn and stick. You have to do it until it becomes softer, and falls into a puree. Now, turn the pumpkin into a saucepan, and add half of the cream and ˝ the herbs, and roast over a low heat for around one hour, or until the puree becomes thick, and the liquid is evaporated. After removing this mixture from the heat, you have to beat it in an additional 2 tbs butter. Now, whisk this mixture in the beaten eggs, add salt and pepper, and place it side to cool. After rolling out the pasta into highest possible thin pieces, cut it into two sheets, and brush one of them with egg wash. With the help of a teaspoon, you can place 24 equal mounds of the pumpkin puree on the egg-washed dough. The second sheet of pasta helps cover the mounded dough. If you want to seal the dough, you can press around the mounds of pumpkin. Now, cut the ravioli with the help of a sharp knife, or a ravioli cutter. After dusting a tray with semolina, you can place ravioli on it. If you want to extend the taste of Pumpkin Ravioli, you can also use sauce with it. It is very easy to make the sauce. While making the sauce, a large pot of water comes into existence. During the preparation of sauce, you have to reduce the stock with the shallots to half cup in a saucepan. After adding the remaining cream, you can reduce by half. Now, you can whisk this mixture in the remaining 4 tbs butter over a low heat. After straining the sauce into a saucepan, you can add the remaining thyme and sage to it. Add pepper and salt according to your taste. Now, you can add ravioli to the boiling water, and bake it for 4 to 5 minutes. After then, removing it with a slotted drain and spoon, you can add the ravioli to the sauce, and cook it for sometime. Don't forget to correct the seasonings. At the final step, after dividing the ravioli among preheated soup dishes, you can spoon the sauce over them.
